West Hartford Dad Transforms into ‘Salad Man’

One parent is using a ‘grassroots’ campaign to get kids to eat healthier and save the weekly salad bars at West Hartford’s elementary schools.

Mild-mannered Norfeldt Dad by day, at lunchtime he becomes “Salad Man,” fighting for truth, justice, trace elements, and increased fiber in the American diet. See Salad Man take on his arch-nemesis, Dr. Deep-Fry! Watch him battle the evil Count Candy and his even evil-er sidekick, the Cavity Kid! Also see a cafeteria full of children laugh at a grown man with fake lettuce safety-pinned to his hat!

Salad Man, aka Jonathan Housum, is doing his part to help promote the salad bar at Norfeldt and help preserve the healthy and fresh option for students.

Norfeldt also has a popular “farm to table” (aka “garden to lunch tray) effort to teach parents and children more about the connections between our food, our health, and our environment. Greens were being harvested from the Norfeldt garden right up until snow covered the ground.
