Dietitian’s Corner: Tips on Making Mother’s Day Memorable – and Healthy

Shana Griffin, registered dietitian for the ShopRite of West Hartford, shares some simple and healthy tips on how to make Mother’s Day meals that are memorable and healthy.

What better way to honor the women in your life this Mother’s Day than by serving up a fresh, healthy home-cooked meal? Joseph Family Markets can help! We’re proud to introduce TimeSaver Supper meal kits, containing everything you need to prepare a delicious and healthy meal at home, in less than 40 minutes! Nikki (our Registered Dietitian in Canton) and I have tested and approved wholesome recipes your family will love! The best part? Our team does all of the measuring, chopping and prep work for you- all you have to do is follow the simple instructions.

Research has shown that when families eat dinner together more frequently, children have higher self- esteem, better grades and fewer alcohol and drug problems; however, many busy families simply don’t have the time. That’s the philosophy behind TimeSaver Suppers – helping you get a hot and nutritious meal on the table in no time, without breaking the bank! We also want to educate our customers and teach them something new in the kitchen, or encourage them to try a new flavor profile. In our upcoming batch of recipes, you’ll even learn to make your own curry paste! Each box is intended to serve two people.

Nikki and I research, test and create recipes that are not only packed with fresh seasonal fruits, vegetables and quality proteins, but tons of flavor. The recipes include full nutrition information and are are designed to be heart healthy, lower in calories and sodium, balanced in carbohydrates, rich in fiber, vitamins and minerals, and incorporate good quality unsaturated fats and omega-3 fatty acids. We also aim to create most recipes to be allergen friendly for those in need of gluten free and dairy free solutions. Our recipes are often lighter alternatives to popular dishes, including Lemon Chicken Piccata with Butternut Squash Noodles, Pesto Cod with Sundried Tomatoes and Roasted Fingerling Potatoes and Wild Caught Salmon with Quinoa, Squash and Swiss Chard.
